Why do we use gäbe here instead of würde geben?
gäbe is the Konjunktiv II (Subjunctive II) form of geben, used to express hypothetical situations (would be). While you could technically say würde es geben, it sounds clunky. For highly common verbs like haben, sein, and the es gibt expression, German speakers strongly prefer the one-word forms (hätte, wäre, es gäbe).
Why is the word order gäbe es and not es gäbe?
The sentence starts with the prepositional phrase Ohne dich. Because this takes up the first position in the sentence, the verb gäbe must take its strict second position. This pushes the subject es into the third position, right after the verb.
