Why do we use uw here instead of jouw?
uw is the formal word for "your". When asking someone about their profession, you are often in a formal situation, like at an office or talking to an adult you just met. It is polite to use the formal uw until they suggest using the informal jouw.
What is the difference between beroep and baan?
beroep means "profession" or the career you are trained for (like a teacher or electrician). A baan is a specific job or position at a company. It is much more natural to ask for someone's beroep. Another very common way to ask this is Wat voor werk doet u? (What kind of work do you do?).
Since we are learning past tense modal verbs, how would I ask "What did you want to be?"
You can use the past tense modal verb wilde (wanted). The natural way to ask this in Dutch is Wat wilde u worden? (Literally: What did you want to become?).
