Escoger means "to choose" or "to pick." Like coger, it is a -ger verb: the g changes to j before -o or -a to preserve the soft sound. That means escojo in the yo form and escoja throughout the present subjunctive. Escoger and elegir are near-synonyms. Escoger often sounds more physical ("pick one from a pile"), while elegir can sound slightly more formal or abstract ("elect," "select among options"). In everyday Latin American Spanish, both are common and interchangeable.
