Why does the word alarm have an -ı at the end?
The -ı is the specific direct object ending (often called the accusative case). Because you are telling someone to turn off a specific alarm ("the" alarm), you add -ı to show it is the direct receiver of the action.
Does kapat literally mean "turn off"?
Literally, kapat means "close" (from the verb kapatmak). In Turkish, you "close" electronics, lights, and alarms to turn them off, and you "open" (açmak) them to turn them on.
Why doesn't the verb kapat have a "you" ending?
Because this is a command! When giving a direct command to one person informally, you use the bare root of the verb without any endings. You just drop the -mak from kapatmak (to close/turn off) and are left with kapat!.
