Профессия is the word for a profession itself.

Teacher and Pupil

Russian distinguishes school from university. Учитель — which you know — teaches at school; преподаватель teaches at a university or institute. Ученик is the school pupil.

Учёный: an Adjective Doing a Noun's Job

Учёный looks like an adjective and declines like one, but works as a noun — учёный работает, the scientist works. Russian has a small group of these, and this is the commonest.

The Animate Accusative at Work

Every profession here is a PERSON, so as a direct object it takes the animate accusative you have just learned — the form that looks like the genitive:

Я вижу продавц*а. — I see the shop assistant. Мы видим артиста.* — We see the performer.

Хозяин is the owner, the master of a house, or the host who invites you.
