Why did "dieta wegetariańska" change to dietę wegetariańską in this sentence?
The verb woleć (to prefer) needs its direct object to be in the Accusative case. For feminine words in the singular, the noun ending changes from -a to -ę (dieta becomes dietę), and the adjective ending changes from -a to -ą (wegetariańska becomes wegetariańską).

Not quite! Woleć takes the -ę / -isz endings. While "I prefer" is ja wolę, "you prefer" is ty wolisz, and "he/she prefers" is on/ona woli.
