Speaking a language
To say you speak a language, Polish does not use the name of the language as a noun. It uses mówić + po + a special adverbial form ending in -u:

The same po ...-u form goes with rozumieć and czytać: rozumiem po polsku, czytam po angielsku.
znać vs mówić po
Znać takes the language as a direct object — znam polski (I know Polish). Mówić never does: it is always mówić po polsku, never mówić polski.

Negation
Nie goes before mówić as usual:
