Two Registers, Two Closings
Polish letters and e-mails split cleanly into oficjalny and nieoficjalny — and the opening you already know (Szanowni Państwo for officials, Cześć for friends) must match the closing.

Pozdrawiać
The verb pozdrawiać is how greetings travel: at the end of a letter (Pozdrawiam!), or through a third person (Pozdrów mamę ode mnie — say hi to your mum from me).

Serdeczny
Serdeczny — from serce, the heart — is the warmth adjective: serdeczne pozdrowienia, serdeczne podziękowania, serdeczny człowiek.

Applying for a Job
The course gave you rozmowa kwalifikacyjna at B1; the paper that gets you there is the list motywacyjny (cover letter), sent in answer to an ogłoszenie (advertisement).
