Why does "falso" translate to "fake" here instead of "false"?
In Italian, falso certainly means "false" (as in "not true"), but it is also the standard word for "fake" or "forged" when talking about physical objects like documents, ID cards, money, or paintings.
How would I make this sentence plural to say "These documents are fake"?
Every part of the sentence needs to change to the masculine plural form. Questo becomes questi, documento becomes documenti, the verb è becomes sono, and falso becomes falsi. The result is: Questi documenti sono falsi.
Why is it "questo" and not "quest'"?
You only use the apostrophe form (quest') when the word immediately following it starts with a vowel, like quest'albero (this tree) or quest'amica (this friend). Since documento starts with a consonant, it remains questo.
