Recipe: A Simple Egyptian Dish

This original recipe makes a simple Cairo-style yellow-lentil soup. Egyptian recipes often address one generic listener with masculine singular imperatives such as اغسل، حط، سيب. That is an instructional convention, not a claim that cooking belongs to men; a speaker can also address one woman or a group explicitly.

The recipe shows several systems working together: measures introduce ingredients, imperatives move the process forward, وبعدين orders steps, لما marks a cooking boundary, and object suffixes keep the soup and bread active without repeating their names.

The broader social setting—offering food, accepting hospitality, and making requests in cafés—is covered in Food, Cafés, and Hospitality. This page concentrates on the language of the cooking process itself.

Complete original recipe

Ingredients and preparation

هات كوباية عدس أصفر، بصلة صغيرة، جزرة، وطماطماية.

hāt kubbāyit ʿadas ʾaṣfar, baṣala ṣoghayyara, gazara, wi-ṭamāṭimāya

Get one cup of yellow lentils, a small onion, a carrot, and one tomato.

اغسل العدس كويس وقطع الخضار حتت صغيرة.

ighsil il-ʿadas kuwayyis wi-ʾaṭṭaʿ il-khoḍār ḥitat ṣoghayyara

Wash the lentils well and cut the vegetables into small pieces.

Cooking

حط العدس والخضار في حلة، وزود عليهم أربع كوبيات مية.

ḥoṭṭ il-ʿadas wil-khoḍār fi ḥilla, wi-zawwid ʿalēhum ʾarbaʿ kubbiyyāt mayya

Put the lentils and vegetables in a pot, and add four cups of water to them.

سيب الحلة على النار لحد ما المية تغلي.

sīb il-ḥilla ʿalan-nār laḥadd ma l-mayya tighli

Leave the pot on the heat until the water boils.

وطي النار وغطي الحلة، وسيب العدس يستوي حوالي نص ساعة.

waṭṭi n-nār wi-ghaṭṭi l-ḥilla, wi-sīb il-ʿadas yistawi ḥawāli noṣṣ sāʿa

Lower the heat and cover the pot; let the lentils cook for about half an hour.

لما الخضار يطرى، اضرب الشوربة لحد ما تبقى ناعمة.

lamma l-khoḍār yiṭra, iḍrib ish-shōrba laḥadd ma tibʾa nāʿma

When the vegetables soften, blend the soup until it becomes smooth.

Finishing and serving

رجعها على النار وحط كمون وملح على حسب ذوقك.

raggaʿha ʿalan-nār wi-ḥoṭṭ kammūn wi-milḥ ʿala ḥasab zōʾak

Put it back on the heat and add cumin and salt to your taste.

لو الشوربة تقيلة، زود شوية مية سخنة وقلبها.

law ish-shōrba tiʾīla, zawwid shwayyit mayya sokhna wi-ʾallibha

If the soup is thick, add a little hot water and stir it.

قدمها سخنة مع عيش محمص ولمون.

ʾaddimha sokhna maʿ ʿēsh moḥammaṣ wi-lamūn

Serve it hot with toasted bread and lemon.

The natural translation uses “blend” for اضرب. Its literal everyday meaning is “hit,” but in a kitchen with soup it means blend or process. Cultural and activity context chooses the verb's sense.

Measures before ingredients

Egyptian measure phrases normally put the container or amount first: كوباية عدس، أربع كوبيات مية، نص ساعة، شوية مية. English does the same in “a cup of lentils,” but Egyptian does not insert a word equivalent to of.

طماطماية is an Egyptian unit noun: one tomato from collective طماطم. The other count nouns are directly singular: بصلة، جزرة.

حط معلقة زيت ونص معلقة كمون.

ḥoṭṭ maʿlaʾit zēt wi-noṣṣ maʿlaʾit kammūn

Add a spoonful of oil and half a spoonful of cumin. (reusable measure pattern)

Imperatives create the recipe spine

The main commands are هات، اغسل، قطع، حط، زود، سيب، وطي، غطي، اضرب، رجع، قلب، قدم. Joined و connects closely related actions. A comma or وبعدين can mark a larger step.

Several forms are morphologically important:

  • حط and وطي contain a doubled consonant or long vowel that must not be reduced carelessly.
  • غطي is “cover,” while وطي is “lower.”
  • سيب العدس يستوي uses imperative سيب plus a bare complement, literally “leave the lentils to cook.”
  • خلي could replace سيب in many recipes, but this page keeps one consistent wording.

قطع البصل الأول، وبعدين سخن الزيت في الحلة.

ʾaṭṭaʿ il-baṣal il-ʾawwil, wi-baʿdēn sakhkhan iz-zēt fil-ḥilla

Cut the onion first, then heat the oil in the pot.

Boundaries with لحد ما and لما

لحد ما tells you to continue until a visible change: boiling or smoothness. لما introduces the point after a condition is reached: “when the vegetables soften.” The verbs following both connectors are bare imperfects, not future forms.

قلب الصلصة لحد ما تتقل، ولما تجهز اطفي النار.

ʾallib iṣ-ṣalṣa laḥadd ma titʾal, wi-lamma tig-haz iṭfi n-nār

Stir the sauce until it thickens, and when it is ready, turn off the heat.

English learners often overmark futurity: the food will soften later, but Egyptian lets the time connector supply that meaning.

Object clitics prevent repetition

After الشوربة is established, feminine ـها appears in رجعها، قلبها، قدمها. In عليهم, plural ـهم refers jointly to lentils and vegetables. The suffix is part of the written word.

دوقها الأول، ولو محتاجة ملح زودلها شوية.

dūʾha l-ʾawwil, wi-law moḥtāga milḥ zawwidlaha shwayya

Taste it first, and if it needs salt, add a little to it.

The feminine participle محتاجة agrees with understood الشوربة. English “it” hides that gender link.

Generic address and alternatives

Masculine singular commands are common in Egyptian recipe prose and video narration (informal instructional register). To one woman, many commands add ـي: اغسلي، حطي، سيبي، قدمي. To a group, use plural ـوا: اغسلوا، حطوا، سيبوا، قدموا.

This is a grammatical choice about the imagined audience. A family recipe may use plural, an instructor may alternate according to the actual class, and a formal cookbook may use verbal nouns or formal imperatives.

💡
Track two chains at once: the command chain moves the process forward, while pronoun suffixes keep the current ingredient or dish active.

Common Mistakes

1. Normalizing every command into MSA

❌ ضع العدس ثم أضف الماء.

Mismatched for this spoken Cairo recipe—it replaces the original Egyptian command chain with formal MSA.

✅ حط العدس وبعدين زود المية.

ḥoṭṭ il-ʿadas wi-baʿdēn zawwid il-mayya

Add the lentils, then add the water.

2. Adding future after a time connector

❌ لما الخضار حيطرا، اضرب الشوربة.

Incorrect here—the time connector already supplies the future boundary; use a bare imperfect.

✅ لما الخضار يطرى، اضرب الشوربة كويس.

lamma l-khoḍār yiṭra, iḍrib ish-shōrba kuwayyis

When the vegetables soften, blend the soup well.

3. Separating the object suffix

❌ رجع ها على النار وقلب ها.

Incorrect segmentation—the feminine object suffix joins both verbs.

✅ رجعها على النار وقلبها دقيقتين.

raggaʿha ʿalan-nār wi-ʾallibha daʾīʾtēn

Put it back on the heat and stir it for two minutes.

4. Treating one recipe version as universal

❌ كل شوربة عدس مصرية لازم تتعمل بنفس المقادير دي.

Incorrect—households and regions vary ingredients, texture, and seasoning.

✅ دي طريقة بسيطة، وتقدر تغير التوابل على حسب ذوقك.

di ṭarīʾa basīṭa, wi-tiʾdar tighayyar it-tawābil ʿala ḥasab zōʾak

This is one simple method, and you can change the spices to your taste.

Key Takeaways

  • Put measures before ingredients: كوباية عدس، نص ساعة، شوية مية.
  • Build the command spine with imperatives joined by و and وبعدين.
  • Use bare imperfects after لما and لحد ما.
  • Keep object suffixes joined: رجعها، قلبها، قدمها.
  • Treat masculine singular recipe address as one convention, not a universal audience or social rule.
